BAINGAN BHURTA


Ingredients

2 big sized brinjals (baingan / eggplant)
1 1/2 cups sliced onions
12 mm. (½") piece of ginger (adrak) chopped
2 green chillies, thinly sliced
1 tsp chilli powder
1 1/2 cups tomato slices
1/4 cup chopped coriander (dhania)
2 tbsp ghee
salt to taste

Method

Wash and dry the brinjals. Apply little oil on them and roast on low flame till they soften and turn black. Cool the brinjals, peel the skin and mash them. Dals
Heat the ghee in a pan and add the onions, ginger and green chillies and sauté them till the onions turn translucent. Add the chilli powder, tomatoes, mashed brinjals and cook till the ghee separates from the gravy. Add the coriander and mix well.

BRINJAL POTATO MIXED CURRY



Ingredients

1 large potato
3 small brinjals
1 large onion chopped
1 tomato finely chopped
1 small capsicum sliced
1 tsp. Fresh coriander leaves finely chopped
curry leaves
1 tsp. Sambhar masala
1/2 tsp. Dhania powder
1/2 tsp. Amchoor powder (dried mango)
1/4 tsp. Turmeric
1/4 tsp. Red chilli powder
3-4 pinches asafoetida
1/2 tsp. cumin and mustard seeds
1/2 tsp. sugar
salt to taste
1 tbsp. fresh curds
1 tbsp. oil


How to make brinjal potato mixed curry

Chop potatoes into 2 long pieces.Chop brinjal also into 2 long thick pieces.Sprinkle a little salt and half turmeric over brinjals.Mix curds, sugar and 1/2 sambhar masala and salt to taste.Pour half this mixture over potatoes, and half over brinjals.Cover and keep aside, to marinate for 30 minutes.Heat oil in a heavy pan. Add capsicum, onion, stirfry for 2 minutes.Drain and remove and Keep aside.Add seedsand asafoetida to remaining oil, add curry leaves.Add marinated brinjals, potatoes, stir fry for few seconds.Make a paste of all masalas and salt in 1/2 cup water.Add to vegetables. Stir and add tomatoes.Saute till excess water evaporates and a thick curry is left.Empty and garnish with stirfried capsicum and onions.

FRIED PEPPER BRINJAL



Ingredients

Brinjal - 4
Onion - 1
Tomato - 1
Garlic flakes - 4 to 5
inch of ginger
Curry leaves
Sambar powder 1 tsp
Pepper powder 2 tsp
Salt 1 tsp
Turmeric powder
4 Oil tablespoons
Mustard 1/2 tsp
Jeera 1 tsp

How to make fried pepper brinjal

Chop the onion, ginger, garlic and tomatos finely. Cut the brinjal into medium size pieces.In a kadai put the oil and when it is hot add mustard. When it pops up add jeera and fry for a second. Then add chopped onion and fry for a while. Then add curry leaves, garlic and ginger and fry. Add tomatos and brinjal and fry till the brinjal is soft. Sprinkle a handful of water.Keep the flame to low, add sambar powder, turmeric and salt. Mix well and fry for few more seconds. Finally add the pepper powder and mix well.

FRIED BRINJALS IN CURD



Ingredients


6 Brinjals
1 cup Curd
1 Onion
3 Green Chillies
1/4 inch piece of Ginger
1 clove Garlic, crushed
1/2 tsp Turmeric powder
1/2 tsp Chilli powder
1/4 tsp Cumin seeds
some Curry leaves
Salt to taste
Oil for frying

How to make fried brinjals in curd

Chop the green chillies finely, jullienne the ginger and slice the onions.In a large bowl, beat the curd with a teaspoon of salt and keep aside.Cut the brinjals into long strips. Make a mixture of salt, chilli powder and turmeric powder. Coat the brinjals with the mixture.Heat oil in a kadai and deep fry the brinjal pieces. Remove and keep aside.In another kadai, heat a little oil and add the mustard seeds. When the mustard seeds begin to splutter, add cumin seeds, ginger julliennes, green chillies, onion garlic and curry leaves. Fry them for some time.Temper the beaten curd with the fried ingredients. Slip the fried brinjals into the tempered curd and let them soak the flavours.

ALOO METHI


Ingredients

Potatoes - 5 (medium sized)
Finely chopped onions - 1/2 cup
Fenugreek leaves - 3 or 4 small bunches
Green chillies - 2
Cumin seeds - 1/2 tsp
Oil - 2 Tbl sps
Fresh thick curds - 3 Tbl sps
Tomato paste - 3 Tbl sps
Turmeric powder - 1/4 tsp
Chilli powder - 1 tsps
Garam masala powder - 1/4 tsp.

How to make Aloo Methi

Boil potatoes peel outer skin and cut into large pieces.Slit green chillies.Wash and chop fenugreek leaves.Heat oil in a frying pan, add cumin seeds, slit chillies and then chopped onions.When it turns gold, add fenugreek and fry for 1 or 2 minutes.
Add turmeric powder, chilli powder, salt and then curds.Mix well and then add potato pieces.Cook for 5 to 7 minutes, stirring in-between.Add tomato paste, 1/2tsp of sugar, garam masala powder and cook till dry.

BRINJAL MUSHROOM CURRY


Ingredients

Onions - 2 big
Garlic - 4 flakes
Oyster Mushrooms - 1 packet (200 gms)
Brinjals - 1/4 kg
Red Chilli Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Tomatoes - 4, medium
Oil for frying
Salt as required

Grind to paste

Grated Fresh Coconut - 1/4 cup
Ginger - 1 inch piece
Garlic - 5 flakes
Cinnamon - 1 inch piece
Cloves - 2
Poppy Seeds - 1 1/2 tblsp
Roasted Gram - 2 tblsp
Green Chillies - 4
Coriander Leaves - 1/2 bunch

How to make brinjal mushroom curry

Slice onions and brinjal otherwise. Wash and chop mushrooms. Cut tomatoes and garlic finely. Heat oil, fry garlic, onions, brinjal and mushrooms together till moisture evaporates. Add chilli powder, turmeric powder, tomatoes and fry well. Add salt, ground paste and cook till it becomes thick gravy.

BRINJAL FRY


Ingredients

Violet Brinjals - 1 kg
Oil for frying
Salt as per taste
Garlic Chilli Powder - as required
Fresh Melted Ghee

How to make brinjal fry

Select big and even sized brinjals. Wash,remove the stem and wipe well with a cloth.
Take a pan heat oil and keep the flame in medium.Deep fry the brinjals on all sides evenly.Split whole brinjals in a plate.Mix little salt,chilli powder. Serve with hot rice.
